Position Summary

We are seeking a passionate and responsible Sushi Chef to join our team at Wagyu Factory Brea. This role is a key part of our back-of-house operations, ensuring excellent food quality, efficiency, and adherence to company standards.

Employment Details

  • Employment Type: Part-Time, Full-Time
  • Wage: Starting at $18 per hour plus tips

  • Start Date: Upon onboarding completion. All required pre-employment notices and documents will be provided at or before the start date, as required by law.

Key Responsibilities

  • Prepare and portion fish, seafood, and sushi ingredients according to restaurant quality and portioning standards
  • Ensure freshness, proper storage, and consistent product quality at all times
  • Prepare dishes in a timely manner and present them with attention to detail and aesthetics
  • Support daily prep tasks, including sushi station setup and end-of-day breakdown
  • Assist with inventory management, including ordering, receiving, and restocking supplies
  • Maintain strict adherence to food safety guidelines and sanitation standards
  • Collaborate with kitchen and front-of-house teams to ensure smooth and consistent service flow

Qualifications

  • Minimum 1 year of sushi preparation experience, including fish filleting and slicing skills
  • Ability to work in a high-volume, fine-dining sushi operation
  • Quick learner with the ability to adapt to restaurant standards rapidly
  • Knowledge of proper seafood storage, handling, and rotation
  • Flexibility to work late-night shifts, weekends, and holidays
  • Fluent in English; bilingual a plus
  • Must be authorized to work in the United States
