Job Summary
We are seeking a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate will have a strong background in the food industry, particularly in Japanese cuisine, and will be responsible for preparing high-quality sushi dishes that meet our restaurant's standards. The Sushi Chef will play a key role in ensuring customer satisfaction through exceptional food presentation and taste.

Duties

  • Prepare and assemble sushi rolls, sashimi, Nigris, hand rolls and other Japanese dishes with precision and creativity.
  • Maintain cleanliness and organization of the kitchen area, adhering to food safety and hygiene standards.
  • Select and source high-quality ingredients, ensuring freshness and proper handling.
  • Collaborate with kitchen staff to ensure timely service during peak hours.
  • Monitor inventory levels of ingredients and supplies, placing orders as necessary.
  • Stay updated on current trends in sushi preparation and presentation techniques.
  • Train and mentor junior kitchen staff on sushi preparation methods and food safety practices.

Experience

  • Proven experience as a Sushi Chef or in a similar role within the food service industry is preferred.
  • Strong knowledge of culinary techniques, particularly in Japanese cuisine, including knife skills and food handling practices.
  • Familiarity with dietary restrictions and the ability to create menu items that cater to various dietary needs is a plus.
  • Prepare with precision-cutting of fish, vegetables, and other ingredients to meet exacting standards.
  • Ensure all sushi and dishes are plated with attention to detail, maintaining the restaurant's visual and aesthetic presentation guidelines.
  • Excellent communication skills and the ability to work effectively in a fast-paced kitchen environment.
  • A passion for cooking and commitment to delivering high-quality dishes that exceed customer expectations.
  • Ensure all kitchen operations comply with food safety standards, especially in the handling and storage of raw fish.
  • Maintain a clean and organized kitchen environment, adhering to local health regulations and the restaurant's sanitation protocols.
  • Train staff on food safety, hygiene, and sanitation practices to ensure a safe and efficient kitchen.
  • Support the Head Chef in preparing for and executing omakase dining experiences, private events, and special occasions.
  • Help create memorable culinary experiences by tailoring dishes to guests' preferences and the occasion.

Qualifications:

  • 3+ years of experience as a Sous Chef, preferably in a high-end sushi or Japanese restaurant.
  • Extensive knowledge of sushi preparation, knife skills, and Japanese culinary techniques.
  • Strong leadership and team management skills.
  • Ability to work in a fast-paced environment while maintaining high standards of quality and precision.
  • Excellent communication skills, with the ability to work collaboratively with both kitchen and front-of-house teams.
  • Knowledge of food safety regulations and best practices in handling sushi-grade fish and raw ingredients.

Working Conditions

This position requires standing for long periods and working in a fast-paced kitchen environment. The Sous Chef must be flexible to work evenings, weekends, and holidays, as required by the restaurant's peak service hours.
