Job Title: Kitchen Manager Reports To: Executive Chef
Job Summary To manage and coordinate all kitchen operations, ensuring the highest standards of food quality, preparation, presentation, and sanitation in a fast-paced fine dining environment, while leading and developing kitchen staff to achieve culinary and operational goals.
Key Responsibilities
- Staff Management: Recruit, hire, train, schedule, and supervise all kitchen personnel (line cooks, prep cooks, dishwashers).
- Operations Oversight: Supervise food preparation, cooking, plating, and quality control, stepping in to cook or assist as needed.
- Inventory & Procurement: Manage food and non-alcoholic beverage inventory, place orders, receive deliveries, and minimize waste.
- Cost Control: Monitor kitchen expenses, track labor costs, manage budgets, and assist in setting menu prices.
- Quality & Standards: Enforce strict food safety, sanitation, and hygiene regulations (HACCP, local health codes).
- Menu & Recipe: Collaborate with the Executive Chef on menu development, recipe adherence, portion control, and new dish implementation.
- Workflow & Efficiency: Develop and improve kitchen processes, manage daily prep sheets, and ensure smooth service flow.
- Equipment Maintenance: Oversee the maintenance and cleanliness of kitchen equipment and workstations.
- Communication: Act as the primary liaison between the kitchen and front-of-house, resolving issues quickly.
Qualifications
- Proven experience in a fine dining or high-end restaurant kitchen.
- Strong leadership, communication, and problem-solving skills.
- Expert knowledge of culinary techniques, food safety, and sanitation.
- Ability to work calmly under pressure and manage multiple tasks.
- Familiarity with inventory management software and scheduling systems.
