Barrio Social is one of Vail's newest and most exciting entries into the restaurant scene to open in years. Set in the beautiful Vail Valley and featuring food and wines of the Iberian penisula with Latin fusion influences. This family owned operation is seeking someone who is highly creative and understands the culinary tapestry of this rich style of cuisine. Position Summary:
This position is responsible for the overall organization, development and operation of the Culinary Department of Barrio Social.
General Duties and Responsibilities
- Assume responsibility for the daily operations of the Culinary department.
- Manage BOH staff through training and most importantly by setting examples both personally and
professionally.
- Innovative recipe creation of dishes and reworking Spanish classics with a forward thinking, modernistic
approach and execution.
- Incorporating aspects of the nature surrounding the area into your flavors and design.
- Superior knowledge of the cuisines of the various regions of the Iberian Peninsula.
- See that safety, cleanliness and sanitation standards are of the highest level of excellence.
- Work closely with the staff ensuring them that you have the ability to perform in all aspects of the kitchen.
- Hands on involvement with your team.
- Placing daily and weekly orders for all food, supplies and equipment and proper storage or utilization of
these product.s
- Seeing that the highest level of quality is maintained at all times including presentation, consistency and
flavors.
- Menu development and execution.
- Is present and actively engaging with the culinary staff for training and quality control.
- Maintains a professional and cohesive team oriented staff.
- Communicates and details various dishes with FOH for allergy issues, gluten based dishes and complete
knowledge of all dishes.
- Sets excellent customer service and work standards all the while demonstrating an exemplary work ethic.
- Develop dishes, recipes and menus for restaurant keeping quality and innovation
- Ensures that all policies and procedures are adhered to by all team members.
- Food Costing and Inventories in conjunction with General Manager.
- Address all repair and maintenance issues related to the kitchen as they may arise.
- Promote safety and proper sanitation controls. Ensure that all staff adhere to sanitation and health
department codes and health protocols including temperature logs, sanitation stations are in place,
rotation of stock, etc
- Time management.
- Staff accordingly depending on seasonality. Seeing that labor costs are kept in check.
- Have interpersonal skills to deal effectively with all contacts including front and back of house staff and
customers.
- Complete other tasks/duties as assigned.
Requirements
- Extensive background in Iberian cuisine with 5 years minimum in a high end Spanish restaurant.
- Working knowledge of federal, state and local labor or health laws.
- Ability to keep up with trends and innovations within the industry.
- Minimum three years in a similar position of overseeing and managing a culinary team.
- Ability to work flexible hours including nights, weekends and holidays.
- Ability to adapt quickly to a changing work environment.
- Ability to take initiative to complete additional work assignments or projects without being asked.
- Ability to develop staff skills, knowledge, experience and encourage growth.
- When placed under pressure or stress, reacts with tact and professionalism.
- Possess a passion for the culinary arts, specifically from the standpoint of Spanish and Portuguese Cuisine, Wine and Culture.
