**Job Overview**
We are seeking a highly skilled and experienced individual to fill the role of Sushi Operations Manager.
The ideal candidate will have a strong background in sushi preparation, management skills, and leadership abilities. This is a hybrid role that combines culinary expertise with operational oversight.
- Responsibilities include preparing new-style temaki sushi, delivering seasonal tasting menus, and engaging with staff to explain ingredients and techniques.
- Maintaining high-quality seafood and ingredients, ensuring consistency and freshness, as well as proper storage and handling.
- Mentoring and training junior chefs and BOH staff in sushi techniques and prep execution, managing labor budgets, and fostering a positive team culture.
**Key Requirements**
- Proven expertise in new-style sushi temaki preparation and fish handling.
- Proficiency in Xtrachef, Sling, and POS systems.
- Strong organizational skills for scheduling, inventory, and cleaning systems.
- Knowledge of food safety, sanitation, and health inspection standards.
- Leadership skills with ability to train, mentor, and motivate staff.
