Culinary Operations ManagerThis pivotal role requires an expert in raw fish preparation, skilled in traditional Japanese techniques and able to oversee all back-of-house operations seamlessly. As our ideal candidate, you will excel in staff training, inventory management, and kitchen organization, ensuring a smooth workflow that delights customers.
Main Responsibilities:- Sushi Expertise & Execution: Develop and refine your skills in preparing and serving new-style temaki sushi according to established methods, emphasizing rice preparation, fish cutting, and precise knife work.
- Ingredient & Food Quality Control: Conduct thorough inspections and handle high-quality seafood and ingredients, upholding consistency, freshness, and proper storage practices (FIFO compliance).
The key to success in this role lies in exceptional leadership qualities, paired with hands-on experience in managing kitchen operations, training staff, and maintaining top-notch food quality standards.
